- Comenzamos troceando el salmón y la cebolleta en dados pequeños. En un bol, añadimos el salmón, la cebolleta, tres cucharadas de zumo de limón exprimido, una cucharada de ralladura de piel de limón, el aceite de oliva, sal y pimienta al gusto y mezclamos todo.



- Por otro lado, pelamos el aguacate y lo cortamos en daditos. Lo incorporamos a un nuevo bol y le añadimos una cucharada de zumo de limón, una cucharada de ralladura de piel de limón, el cilantro, salpimentamos al gusto y mezclamos todo. Y empezamos a montar.



- Con un aro de emplatar, rellenamos una capa de la mezcla de salmón, añadimos otra con la mezcla de aguacate y cubrimos con una capa más de salmón. Refrigeramos durante una hora.



- Por último, retiramos el aro y añadimos el huevo rallado y pimiento, para decorar y servimos. También podéis poner semillas de sésamo en vez de pimiento o huevo.

- Nota: Si no queréis que el aguacate se oxide y coja un color oscuro, solo debéis rociarlo con el jugo de limón. Se mantendrá con su vivo color verde. 😉
