- Antes de pelar y rallar las batatas tendremos todos los ingredientes a utilizar a mano incluyendo el coco rallado, la razón es que la batata suele oxidarse.
- Por la parte mas estrecha del rallador rallamos el coco.

- Pelamos las batatas y las rallamos.

- Añadimos el coco, el azúcar, la sal y la canela. Mesclamos bien.

- En un vaso pondremos la leche de coco y la leche evaporada junto con el jengibre y la mantequilla y llevamos al microondas a calentar bastante.
- Luego unimos los ingredientes solidos con los líquidos. Y movemos lentamente hasta integrar.

- En una fuente de horno pondremos papel vegetal y vertemos la mezcla. Le agregamos unas uvas pasas opcional y llevamos al horno a 250 grados durante una hora y media.

- Pasado el tiempo sacamos dejamos enfriar y con cuidado desmoldamos y servimos.

- Un vaso de leche fría para acompañar es genial.
